Corn and Coconut Cake

This cake is super easy to make and it take almost no time to prepare. Perfect for one of those afternoons when you want something sweet and delicious to go with your cuppa.


  • 1 cup flour
  • 1 cup corn flour
  • 1 cup light brown sugar
  • 3/4 cup desiccated coconut + 1 tbsp
  • 1 tsp salt
  • 1 tsp baking soda (bicarbonate soda)
  • 400ml coconut milk
  • 1/2 cup sunflower oil or any other kind of vegetable oil
  • 1/8 cup apple cider vinegar
  • 1 tsp vanilla extract
  • 2 tbsp icing sugar


  1. Mix flour, light brown sugar, 3/4 cup desiccated coconut, corn flour, bicarbonate soda and salt.
  2. Add in 1 cup coconut milk, oil, vinegar and vanilla extract.
  3. Mix and pour the mixture into a greased 9 inches round spring form baking tray.
  4. Bake it for 25 minutes at 180C.
  5. Mix the rest of the coconut milk with the icing sugar and the rest of the desiccated coconut.
  6. Pour it on top of the cake and serve it.

    Hi. This looks great. Is the corn flour the fine white powdery type or the yellow type that’s like a finer polenta? Sometimes it’s tricky with the different international names for things :)

      Hi Sean, the cup I use has 236.64ml. Does that help? Another suggestion is that you use one mug as your cup measurement and all the rest (half cup, quarter) comes from that. Let me know if you have any other question. Cheers :)

    Thanks for the reply …. so if 1/8 cup is required I divide 236.64ml by 8 = 29.58ml yeah?

    Hey there, I just found the recipe yesterday and was wondering whether you are using full fat coconut milk or the light version in case you are seeing my comment ;-)

    Hi Vanessa, I made the cake today and it absolutely delicious! Thank you for the recipe that I will make again for sure. Only comment: I had to increase baking time to roughly 45 mins before the cake was done.
    My mum and I both look forward to having some more cake tomorrow :-)
